- Upon completion of this course, participants will be able to: • Understand the requirements of ISO 22000. • Identify the key food safety elements required by the standard. • Understand what assessors look for when evaluating a Food Safety Management System (FSMS). • Explain the process-based FSMS model according to ISO 22000 and the role of internal auditing in maintaining and improving the system, with reference to the Plan–Do–Check–Act (PDCA) cycle. • Describe the assessor’s roles and responsibilities in planning, conducting, documenting, and following up on internal audits of the FSMS, in accordance with ISO 19011 guidelines. • Plan, conduct, document, and follow up on an internal audit of part of a Food Safety Management System based on ISO 22000, in line with ISO 19011.
